You cannot deny a service dog, or service pony, or service monkey, or service pig, etc. It's more complex than that, of course.

and just for an interesting take on things,
http://blogs.seattleweekly.com/dailyweekly/2011/03/top_five_weirdest_service_anim.php which refers to HB1728, that actually relates to requiring businesses where food for human consumption is sold or served to allow persons with disabilities to bring their service animals onto the business premises.

If you really screen all applicants carefully for background, financial history, criminal record, employment background, you may find that many people don't meet your requirements to rent your place--exclude the fact there there is a service dog, and evaluate all applicants in the order you received the application and apply the same criteria to all.
