...we discussed a few repairs - wall crack, window coverings...now he has torn down walls and ceilings and seems to not understand why this is a problem. I think it is criminal and believe I can get the sheriff out here sooner than later...? Ideas..?

This is why you should never, ever allow a tenant to make repairs. Call the Sheriff and ask for a deputy to meet you at the rental. Whenever landlords report damage by tenants they always say they can not do anything because no one saw the tenant do the damage. Well, tell them you have a crime in progress. Make a criminal report. Better sooner than later.

This is not criminal(unless you are saying this is vandalism) however he is responsible for putting the property as it was.
