I don't think you are obligated to let the tenants pick the carpet. However, this is what I would consider:

Are they good tenants? Do they pay on time, take care of the property and get along with the neighbors? How long have they lived there?

If they are good tenants, I would try to work with them if possible. A good tenant is hard to find.
