I have power of attorney for my parents. I need to evict a tenant for nonpayment. When filing papers do I put there my parents name as plaintiff or my own name.

You need to see lease and who are on the contract. I believe your parents will be on the contract then u need to file with their name. You can use power of attorney or say that u r the manager. I believe both should work.
