Best way to return security deposit

What is the best way to return a tenant's security deposit to make sure that the tenant can't say it was not returned and that provides them the fastest availability to the money? - a bank cashier's check, a money order?
Normally I write a check and there's no problem. I am concerned about these tenants and want to return the money as quickly as possible, but also want to make sure they can't later say they didn't get it, so I want to know the best way to do this. I plan to mail it to them via FedEx or UPS express.

Even if you send the check & SDSS via certified mail RRR, that's not proof the mailing included the check. I would use a personal check so I can get a copy of it after it has been cashed or I can cancel it if they say they didn't receive it. I typically send it out certified mail (less expensive than RRR) and that allows me to track the mailing so I know the envelope was delivered.
