In your specific situation, there are absolutely no ways at all to delay or contest her legally terminating the rental agreement. She has given proper notice. She has the proof in her hands that she did so.

This is not CSI or a criminal case. You don't switch lawyers to get more time. It won't do anything for you in eviction court. Nothing at all. It case will still go on. There aren't any extensions when you are squatting. And then you will be responsible for ALL court costs the LL has. Also, you will not be able to rent anywhere for a long long time so when the sheriff kicks you out, you will literally be on the street or begging to stay on someone's couch for months.

There are no ins and outs for you. NONE. NADA. After it goes to court, you will have 1 WEEK and then you will be locked out of the apartment by the police.
