If you feel like this was an honest mistake due to her recent changes in jobs and finances, then there's no harm in giving her the benefit of the doubt, especially since she said she'd get you payment plus the NSF fee.

Good tenants do make mistakes, and if she checked out in every other way, just tell her that you will only accept payment in cashier's checks or money orders, which, by the way, is the only way you should be receiving move-in funds anyway.
