I am expecting/preparing for small claims court with a tenant in Minnesota. I am wondering if Text Message conversations will be accepted as evidence or should I start using Email to communicate with the tenant.

Use the Post Office and Registered Mail. As backup you can use both the other two methods along WITH registered mail. Maybe the courts have changed, but I'm not aware of a replacement.
