You should have just 1 lease with both sister's signatures on it. That makes them both responsible for the contents of the lease, should 1 of them choose not contribute to the rent, or decide to move out. There is no need for ANY "sensitive info" on ANY lease. That info all needs to be on their application form you had them fill out for you.

Garry---I knew I could count on you.

Is there any personal information that I should keep on the lease such as a DOB or DL#? Or would a copy of their application (signatures and ALL their info) and a copy of their ID be enough to cover me if I end up in court?

I would imagine that any reasonable DJ would look at the signatures on the lease, their applications and IDs and be able to tell that they are the same person.

I'm probably overthinking things here, but I'd rather err on the side of caution.

Any additional addendums or details, requirements, etc. that I definitely NEED to include when it's a lease with two parties?

TIA, Garry.

Yes, Jason, you ARE overthinking things here. The ONLY personal info that goes on the LEASE, is their names. ALL their OTHER personal info goes on their applications. IF you end up going to court, then you will need the info on their apps to be able to file a court case.
What you should do, is contact a local attorney, and have them get you a standard lease form that conforms to all of your state codes. Then make copies of it to use as needed over the years to come. Once you have that, you can add addendums to it as needed, such as what appliances or utilities are furnished by you, or who shovels the snow or mows the lawn. Be sure all parties on ANY lease, who are age 18 or older and will be living there, sign the lease. That makes ALL the adults living there, responsible for the rent, if someone loses a job, or moves out.
